Even though Rough Crafts is best-known for custom Harley projects, shop boss Winston Yeh doesn't shy away from trying something different every now and then. The motorcycle we’ll be looking at today doesn't follow his regular formula, based on a Ducati Monster 821 and taken far down the cafe racer route. This menacing beast calls itself the Bologna Dogfight and we absolutely love everything about it.

With the donor back at the shop and fully dismantled, Winston began by replacing its original subframe with a billet aluminum substitute made from scratch. It tightens up the Monster’s rear end considerably, while supporting a 3D-printed tail section with multi-function LEDs attached to it left and right. A custom two-piece saddle is also present in that area, featuring black leather upholstery and diamond pattern stitching.

urther ahead, one may find a handmade aluminum fuel tank that looks like a million bucks, embellished with a CNC-machined filler cap and Rough Crafts badges. There are no fenders to speak of at either end, so the new bodywork is brought full circle with a 3D-printed front fairing packed full of cafe racer charm. It houses two vertically stacked LED projectors from Koso to illuminate the way ahead.

A short windshield is placed up top, right in front of a thoroughly updated cockpit area. Said location is home to a custom billet top clamp with integrated clip-on handlebars, sporting the original switches, Motogadget grips, and Beringer control levers. The stock digital dash has been retained but repositioned on a tailor-made bracket, then it came time to address the suspension.

The forks were kitted with an Andreani cartridge kit and reinstalled by way of a fresh lower triple clamp from CNC Racing. Ohlins is the name of the game at the opposite end, with an adjustable remote-reservoir shock absorber handling suspension duties back there. The brakes received a comprehensive makeover, too, and they now feature high-grade Beringer calipers and MotoMaster discs at both ends.

BST supplied a pair of carbon fiber wheels measuring 17 inches in diameter, both dressed up in grippy Pirelli Diablo Rosso IV Corsa rubber. CNC-milled rearsets from Sato Racing finish off the ergonomic package, and the engine mods are limited to the intake and exhaust. Premium air filtration paraphernalia was given to the former, but we’re far more excited about that stunning exhaust system.

It is a stainless-steel item from SC-Project, running a two-one-two configuration and flowing beautifully from front to back. For the finishing touches, the Bologna Dogfight gained some carbon fiber inlays and a whole load of gloss- and matte-black paint. Contrasting white pinstripes are present on the bodywork, but the bike’s color scheme is a stealthy, murdered-out affair for the most part.
